Description A simple, small-scale wheat milling process using indigenous machinery has been developed. The process consists of debranning of cleaned wheat in a huller, grinding of polished wheat in a chakki mill and mechanical sieving. Trials with 5-10 kg of wheat were carried out in Huller No. 3, after 3-6% addition of water and 5-15 min rest period. Huller screens of different types and sizes were used. Huller No. 1 was tried with 100 kg polishing/h with moistening (2-6%) and rest period (5 min). 5-10 % bran was removed in a single pass and 10-12% in a double pass. In Huller No. 3 optimum polishing was achieved with 4-5% water for conditioning and rest period of 5-10 min when 5-7% bran was removed without any loss of endosperm. In Huller No. 1 4-5% water and rest period of 5-10 min with a feed rate of 2 kg/min was found optimum; a second pass could give 10-12% polish when the feed rate could be 5 kg/min. Grinding was done using a chakki consisting of 2 corrugated metal discs. Semolina of desired particle size could also be obtained from polished wheat using a chakki. Regrinding the coarse fraction would give atta suitable for roti/chapatti preparation. A set of 40, 60, 80 and 100 mesh sieves was found suitable for separating; bread flour (30-35%) or biscuit flour (30-40%) could be separated using 100 mesh sieve, the remaining flour (50-65%) will be suitable for roti/chapatti. The process could be employed for durum semolina milling with some varieties in grinding and by using sieves of 18, 30, 50 and 80 mesh whereby 55-60% semolina of different fineness and 30-40% roti/chapatti atta could be obtained.
